In this French pastry class we will learn to make the classic French eclair. This light, hollow pâte à choux pastry is filled with classic Crème Pâtissière and dipped in a shiny chocolate ganache. Learn the history, the technique, and the application just in time to make your own eclairs (or cream puffs!) for Valentine’s Day.
